Southwest chicken tacos 🌮 by @cookinwithmima CHICKEN: 1 lime 2 large chicken breasts 3 tbsps. Ortega’s Taco Seasoning Mix 3 tbsps. olive oil SIDES: 12 Ortega Yellow Corn Taco Shells 2 cups shredded iceberg lettuce Ortega’s Flavor Craver Taco Ranch 1 cup shredded Mexican Cheddar Cheese Jalapenos (optional) GUACAMOLE: 3 avocados, slightly mashed 2 tbsps. chopped cilantro 3 tbsps. lime juice 1 garlic clove, minced 1/2 jalapeño, minced 2 tbsps. purple onion, finely chopped PICA DE GALLO: 4 roma (plum) tomatoes, diced 3 tbsps. purple onion, finely chopped 2 tbsps. cilantro, chopped 2 tbsps. jalapeños 1/2 tsp salt 1 tbsp. olive oil SOUTHWEST SALAD: 1 1/2 cup corn 3/4 cup black beans 1/2 cup red bell pepper, diced 3 tbsps. purple onion, chopped 2 tbsps. cilantro, chopped 1/2 tsp salt 1 tbsp. olive oil 2 tbsp. lime juice INSTRUCTIONS slice your chicken breast in two flat halves. Rub with some lime and then coat both sides with the taco seasoning. Heat 3 tbsps. of olive oil and pan sear the chicken until they are full cooked, occasionally flipping them over to the other side. remove from heat and cover with aluminum foil to rest for 10 minutes. meanwhile, prepare the sides. All the ingredients for the sides are listed above and you basically just have to mix each side’s ingredients in a separate bowl and serve. Don’t forget the chopped iceberg lettuce. Cube the chicken up into little pieces and place into a bowl or a food warmer storage container to serve. Build your own tacos and enjoy!

Made these delicious homemade blueberry muffins with a hint of orange 🍊 I am so happy the way they turned out 🧁 Ingredients: 1/2 cup butter softened at room temperature 2 eggs 1/2 tsp vanilla extract 3/4 cup sugar Zest of half an orange (optional) 1/2 cup whole milk 1 1/4 cup of all purpose flour 1 1/2 tsp baking powder 1/2 tsp salt 1 cup fresh blueberries Procedure 1. Preheat oven to 350 degree oven and place 12 cupcake liners to you tin and set aside 2. Cream together your better and sugar and to that add your 2 eggs and vanilla extract, milk and orange zest 3. Now out of the flour mixture take out a tbsp and add it to the blueberries this will allow your blueberries to be evenly distributed in the batter 4. Now add all the dry mixture(flour, baking powder, salt) to the wet batter and mix until everything is incorporated 5. Now gently fold in the blueberries to the batter carefully without bursting any of the blueberries 6. Now scoop your batter using a spoon or an ice cream scoop try to add them all evenly 7. Bake them in the oven for 20 and 1 minute under the broiler to get the crispy top and take them out once a toothpick inserted come out clean 8. Take them out of the oven! Blueberry muffins are now ready to serve!! Enjoy 😋

Sweet chilli chicken by @dinneratthezoo INGREDIENTS 1 1/2 pounds boneless skinless chicken breasts cut into 1 inch pieces 2 eggs lightly beaten salt and pepper to taste 1/2 cup all purpose flour 1/2 cup cornstarch oil for frying 3/4 cup sweet chili sauce 1/3 cup sliced green onions INSTRUCTIONS Place the eggs in a bowl, add salt and pepper to taste Mix the flour and cornstarch together and place in a shallow bowl or on a plate Heat 3 inches of oil in a deep pot to 350 degrees F Dip each piece of chicken into the egg, then roll into the flour mixture. Repeat with all of the chicken. Fry 7-8 pieces of chicken at a time for 5 minutes or until golden brown. Drain on paper towels. Repeat the process with all of the chicken. Toss the chicken with the chili sauce. Sprinkle with green onions and serve.

Delicious garlic butter Husselback potatoes 🥔 by @healthyfitnessmeals Ingredients 20 Small Russet Potatoes washed/scrubbed and pat dried 4 Garlic Cloves minced 4 Tbsp Butter or Olive Oil melted 1 Tbsp Fresh Chopped Rosemary 1 Tsp Chili Flakes optional Sea salt and fresh ground black pepper Instructions Preheat oven to 400F. Cut each potato into slices about 3 to 4 mm apart, without cutting all the way through it, and place them on a baking tray. In a small bowl mix melted butter (or oil), with chili, garlic, and rosemary. Brush well the potatoes with the garlic butter mixture then season generously with salt and pepper. Bake in the preheated oven for 45-60 minutes or until golden brown and crispy on tops. Enjoy!

Delicious Santa’s m&m cookies 🍪 by @cookinwithmima INGREDIENTS 1 1/2 cups all purpose flour 3/4 cup butter (soft, room temperature) 1/3 cup white sugar 1/2 cup light brown sugar 1 egg 1 tsp baking powder 1/4 tsp salt 3/4 cup milk chocolate chips 1 tbsp. vanilla extract 1 cup mint M&M Holiday Chocolate (save 1/3 cup to top the cookies) INSTRUCTIONS Preheat the oven to 350 degrees. Meanwhile, in a bowl or cake mixer, beat the butter with the sugar until smooth and creamy. Add the vanilla and the egg and beat until they are well incorporated. Add the dry ingredients gradually: flour, salt and baking powder. Mix until you have a sticky dough. Remove and add the chocolate chips and 2/3 of the M&M chocolate and everything together well with your hands or spatula. With an ice cream scoop, divid the dough into 12 pieces and place on a cookie sheet. Add some pieces of M&Ms and Chocolate chips on the top before baking. Bake for 12 minutes on 350 degrees or until the cookies look almost golden. Do not over bake or you will end up with hard cookies. Remove and let them cool on the pan for about 10 minutes. You can enjoy them warm if you like soft hot cookies or save them in a can or taper ware for later on.

Classic chocolate chip pancakes 🥞 by @cookinwithmima INGREDIENTS 1 cup all purpose flour 1 1/2 tsp baking powder 1/2 tsp baking soda 1/8 tsp salt 2 Tbsp melted butter, cooled + more for cooking 2 Tbsp granulated sugar 1 egg 2 tsp vanilla 1/2 tsp lemon juice 1 cup buttermilk 1/2 cup mini chocolate chips INSTRUCTIONS In a large bowl, combine flour, baking powder, baking soda and salt. In a medium bowl, whisk together butter, sugar, vanilla, egg, and lemon juice. Whisk in buttermilk until combined. Fold in mini chocolate chips. Heat a griddle pan or large skillet over medium-high heat. Add 1 Tbsp butter to the pan. Working in batches, scoop 1/3 cups of batter and add to the pan, forming circles. Cook for 3 to 4 minutes, until bubbles form around the edges of the pancakes. Flip and cook another 2 to 3 minutes until golden brown. Serve with maple syrup!

Creamy sun dried tomato penne pasta by @cookinwithmima INGREDIENTS 8 oz penne pasta 2 tbs olive oil 1 lb chicken, cubed into bite-sized pieces 1/2 tsp black pepper 1/4 tsp salt 1/2 tsp garlic powder 1/4 tsp onion powder 1/4 tsp cayenne pepper 1 7-oz jar sun-dried tomatoes, drained 3 garlic cloves, minced 2 cups ofmilk, 2 Tbsp separated out 1/2 cup chicken broth 1 Tbsp cornstarch 1 cups mozzarella cheese 1/3 cup grated parmesan cheese Chopped fresh basil INSTRUCTIONS In a small bowl, stir together black pepper, salt, garlic powder, onion powder, and cayenne pepper. Season chicken with the seasoning. Cook pasta according to the instructions on the package. Drain and set aside. In a large skillet, heat olive oil over medium-high heat. Add chicken and cook until browned and cooked through, approximately 5 to 6 minutes. Add tomatoes and garlic and cook for approximately 3 to 4 minutes. Add 2 cups milk, broth and both cheeses. Simmer for 10 minutes. In a small bowl, whisk together cornstarch with remaining 2 Tbsp milk. Add slurry to the skillet and continue to cook until thickened, approximately 5 minutes. Stir in drained pasta. Top with chopped fresh basil. Serve immediately.

Chicken fajitas by @healthyfitnessmeals Ingredients 1 pound thin boneless skinless chicken breasts 2 cups thinly sliced bell peppers of various colors 1 red onion thinly sliced 2 teaspoons olive oil salt and pepper to taste For the marinade: 3 tablespoons olive oil 1/4 cup lime juice 1 teaspoon honey 1 teaspoon kosher salt ¼ teaspoon ground cumin ¼ cup water ½ teaspoon garlic powder ¼ teaspoon ground black pepper 1 and ½ teaspoons smoked paprika 1 teaspoon onion powder 1 tablespoon chili powder Instructions To prepare the marinade, pour the lime juice, olive oil and water into a large resealable bag. Add the remaining marinade ingredients to the bag. Seal bag and shake to combine. Add the chicken to the bag of marinade, seal and place in fridge - marinate at least 2 hours or up to 8 hours. In a large pan, heat the 2 teaspoons of olive oil over medium high heat. Add the peppers and onions and cook for 5-6 minutes or until tender and slightly charred. Season to taste with salt and pepper. Remove the peppers and onions from the pan; place them on a plate and cover with foil to keep warm. Wipe out the pan with a paper towel then remove chicken from the marinade and add it to the pan. Cook over medium heat for 4-5 minutes on each side or until cooked through. Slice the chicken breasts, then place on top of the reserved peppers and onions and serve immediately.
