Baked Sweet Potato & Purple Fries by 📸 @thevegansara via @vegangotgame #vegangotgame 🍟 Recipe: Ingredients 4 medium purple sweet potatoes & purple sweet potatoes 11/2 tbs olive oil 1 tsp sea salt 1 tsp black pepper 1 tsp garlic powder 1/2 tsp paprika powder How to make: STEP 1 Preheat oven to 200°C/400°F. STEP 2 Wash potatoes under running water by rubbing them well with your hands. There is no need to peel the potatoes. STEP 3 Cut the potatoes into fry-shaped pieces (about 1/2 cm each). Try to cut them into similarly sized pieces. Add the potatoes to a large bowl. STEP 4 Sprinkle cut potatoes with sea salt, black pepper, garlic powder, and paprika powder. Drizzle with olive oil. Toss everything together to coat. STEP 5 Spread the potatoes in a single layer on a baking tray covered with baking paper. Make sure the potatoes aren't overcrowded, otherwise they will stick together and won't crisp up. STEP 6 Bake the potatoes in the oven for about 30-40 minutes. Enjoy!

Mushroom risotto by @elavegan 🍄 ⁣ .⁣ .⁣ 🥒🍉🍇FOLLOW @ChubbyVeganGirls for more vegan recipes!🥑🍎🍓⁣ .⁣ .⁣ Ingredients:⁣ 1/2 cup risotto rice (120 g)⁣ 1 medium onion diced (divided)⁣ 2 big cloves garlic minced (divided)⁣ 2 tbsp coconut oil divided⁣ 1/4 cup white wine (vegan) (60 ml)⁣ 1 1/4 cup vegetable broth (300 ml)⁣ 1/2 cup coconut milk canned (120 ml)⁣ 3 cups white mushrooms sliced (200 g)⁣ 1 cup chickpeas canned (150 g)⁣ 1 tbsp soy sauce (wheat free if GF)⁣ 1 tbsp balsamic vinegar⁣ Nutritional yeast flakes to garnish⁣ Fresh parsley, black pepper, sea salt, red pepper flakes to taste⁣ Instructions:⁣ 1. Heat 1 tbsp coconut oil in a skillet/frying pan, stir in 1/2 of the diced onion and 1 clove of minced garlic and fry for 4-5 minutes over medium heat⁣ 2. Add rice, stir for about 1 minute until the rice is opaque. Pour over the wine, keep stirring constantly until the wine is absorbed⁣ 3. Add 1/2 cup vegetable broth to the rice, and cook on low-medium heat until the broth is absorbed. Stir continuously and add more broth, 1/4 cup at a time until the liquid is absorbed and the risotto is cooked and creamy (about 15 minutes)⁣ 4. In a different skillet/frying pan heat the remaining 1 tbsp coconut oil, stir in the remaining diced onion and minced garlic and fry for 4-5 minutes over medium heat⁣ 5. Add the mushrooms and chickpeas and fry for 3-5 minutes, add balsamic vinegar, soy sauce, and coconut milk and let simmer for about 5 minutes, stirring occasionally. Season with black pepper, red pepper flakes, salt to taste and fresh parsley⁣ 6. Even though we’ve had a warm couple of days, I’m still craving all the comfort food and pasta is always a go-to option for me. Aside from eating pasta, I’ve spent most of my weekend so far getting in a gym session, studying and then taking a walk in the park. How has your Saturday been so far? 💚 Easy tomato sauce recipe 1/2 medium red onion, chopped 1 clove garlic, minced 3 tbsp tomato paste 1/2 can canned tomatoes 1 tbsp tamari 1/2 tsp paprika 1/2 tsp cumin Add the onion and the garlic to a non-stick frying pan and cook for 2-3 minutes, until fragrant. Then, ass the tomato paste, canned tomatoes, tamari, paprika and cumin. Simmer, stirring frequently, on a low-medium heat for around 5 minutes. Ciao amici! 🍔 Che combinate di bello questo sabato sera? Il Sig.Cavolo mentre decide sul da farsi post cena (è un po' pigrotto ultimamente) si pregusta questa cenetta supercolorata che lo aspetta! Poi si vedrà! Guardate che veggieburger ultrapink ha realizzato nel pomeriggio! Ed il tutto è nato perché aveva un barattolo di lupini da consumare a breve! 😅 Con calma, uno per uno dopo averli tenuti in acqua li ha sbucciati. Poi ha pensato che quelle belle rape al vapore sarebbero state perfettissime per rendere supercolorati e saporiti dei veggieburger da urlo! Ed in effetti il risultato è coloratissimamente entusiasmante! 🌈 Meravigliosamente glutenfree (con farina di grano saraceno e semi di chia per compattarli) eccoli pronti per essere consumati dopo un giro in forno a creare una croccante crosticina...🤤 Va be, il Sig.Cavolo sbava anche stasera mentre vi descrive la sua cena...sarà la Primavera che s'avvicina? Raw brokolicové sushi s miso a bazalkou. 🌱⠀ ⠀ Na dve rolky potrebujeme : ⠀ - 1 malú brokolicu, nastrúhanú⠀ - 1 avokádo ⠀ - 1 čl miso pasty ( ja mám brown rice miso z @yeme_plnochutne_potraviny ) ⠀ - Pár lístkov čerstvej bazalky⠀ - 2 pl vody ⠀ ⠀ Ďalej budeme potrebovať : ⠀ - 2 nori plátky⠀ - Zeleninu podľa výberu ( ja som dala do vnútra len cuketu) ⠀ ⠀ 1. Avokádo, miso pastu, bazalku a 2 pl vody rozmixujeme kým nám nevznikne “nátierka”. Potom túto zmes zmiešame s nastrúhanou brokolicou. ⠀ 2. Nori riasu na sushi si dáme na tácku, 1/3 z nej natrieme brokolicovou zmesou, pridáme zeleninu, a pomaly toľkú zarolujeme. Koniec plátku navhlčíme vodou aby sa rolka nerozpadla. Hotovo.
