In our home we dont wait for Ramadaan (the holy fasting month for Muslims) to have certain types of snacks or dishes or drinks or anything. I prefer to have a nutritious meal instead of snack foods. I dont drink much juice or soft drinks and also dont do smoothies. My husband howerver, different story 😳 These pokoras r gluten-free as i didnt use any wheat flour in making them. I dont deep fry them either but shallow fry in palm oil. I also would normally pop them into the airfryer for a few mins to reheat. Since wheat is so highly associated with causing inflammation in the body, its ironic how Ramadan is the time where many people consume copious amounts of wheat-based meals, snacks and desserts. If u want to make a positive dietary change during Ramadan, reduce how much wheat u consume. Your fasting body will gain so much more benefits. Lettuce Pokoras 🔹One meal at a time with Caashifa🔹 Ingredients 1/2 bunch lettuce leaves (preferably not iceberg) chopped 1 onion chopped 1 cup chickpea flour 1 Tblsp tapioca flour 1/4 tsp baking powder 1/8 tsp baking soda 1/2 tsp cumin powder 1/2 tsp corriander powder 1/2 tsp tumeric powder 1 tsp chilli powder 1/2 tsp asofoetida (optional) Crack of sea salt 1/2 cup water to make a runny batter Combine flours, spices, and salt. Mix well with a whisk. Add the onions and lettuce with the dry ingredients. Squeeze the veg with the dry ingredients. Add a small amount of water and keep adding till a runny batter is formed. Heat oil for shallow frying on medium heat. Scoop 1 Tblsp of the batter into the oil. Fry till golden brown then flip and fry on the other side. Drain on absorbent paper. Serve with your favorite chutney or sweet chilli sauce. The same batter can b used to dip sweetpotato - cauliflower - spinach - eggplant - chilli - zucchini - cabbage or a combination of vegetables. For a meaty variety add minced meat to the vegetables, shape into a ball and coat in the mixture before frying.

Mixed Vegetable Pokoras 🔹One meal at a time with Caashifa🔹 Ingredients 1 potato grated 1 onion chopped 1 small head cauliflower chopped into very small pieces 2 handfuls of lettuce leaves chopped 2 handfuls spinach leaves chopped 1/2 cup chickpea flour 1/2 cup self raising flour 2 Tblsps rice flour / tapioca flour 1 tsp baking powder 1 tsp cumin seeds 1/2 tsp cumin powder 1/2 tsp corriander powder 1 tsp chilli powder Crack of sea salt 1/4 cup water (do not add all the water) Place all the veggies in a bowl. Add the dry ingredients and mix with the veggies. Squeeze the veg till water is released and forms a stiff dough. Add a drop or 2 of water and keep squeezing. The mixture should b firm. Heat oil for shallow frying on medium heat. Take 1 Tblsp of the mixture and place in the oil. Fry till golden brown then flip and fry on the other side. Let rest on paper towel to drain any excess oil before serving.

My fondest daltjie memory has to be of my maternal grandfather standing over a huge silver bowl and frying them for the whole family house (many of us in and out). He loved pieces of potato that were still crunchy but tender in them. I loved how i could hear his dentures crack as he chewed. These memories created in a kitchen have become my joys over the years and i treasure them dearly. Daltjies go by quite a few names but the universal truth is that they r fried balls of flour and spices and veggies. Everyone wud have their own version and if u lucky enough u will find them exquisitely soft on the inside and crunchy on the outside. The flavors of the spices should tantalize your tongue but not overpower the taste of the chickpea flour. Yes, these r the good things good memories r made of and tonight this is wot lays on our table. The low carb version is for another day...just not today 💝 Cape Malay Daljies 🔹One meal at a time with Caashifa🔹 Ingredients 2 cups chickpea flour 2 Tblsps tapioca flour 1/2 cup all purpose flour 1 tsp baking powder 1 tsp tumeric 2 tsp coriander powder 1 tsp cumin powder 1 tsp ground chillies Handful of coriander leaves chopped Handful of spinach leaves chopped 1 onion chopped 1 potato chopped 4 cloves garlic chopped Crack of sea salt Room temperature water Palm oil for deep frying Heat the oil on medium. Mix all the dry ingredients together. Add the vegetables and toss till they r all covered in the mixture. Add water slowly to make a thick batter. Dip an icecream scoop in water. Scoop the batter into the wet icecream scoop then into the oil. Fry till golden on all sides. Drain on kitchen paper and serve warm.

The secret to a really crispy pokora is rice flour / tapioca starch 👌 Crispy Onion Pokoras 🔹One meal at a time with Caashifa🔹 Ingredients 1 large onion, sliced 1/4 cup cilantro, chopped Crack of sea salt 1 cup chickpea flour 2-3 Tblsps rice flour / tapioca flour 1/2 Tblsp cumin seeds Enough water to make a thick batter Combine flours, spices, and salt. Mix well with a whisk or your hands. Add the onions and clinatro and squeeze, sweating the onions. Add oil and a small amount of water till a thick batter is formed. Mix well to combine. The batter will become sticky. Let it rest for 5 minutes and then stir again. Heat oil for deep frying on medium heat. Form small balls with the onion mixture with your hands, and drop these into the oil. Fry for about 7-10 minutes, flipping as needed, until pakoras are a deep golden color. Let rest on paper towel to drain any excess oil before serving.
