Keto instant pot crack chicken... So yummy! This recipe can easily be cut in half if you dont need this much, we like left overs for easy lunches. Enjoy! Ingredients 1 lb bacon, chopped 4 lbs boneless, skinless chicken breasts 4 (8 oz) blocks cream cheese (32 oz of Kite hill cream cheese for dairy free) ½ cup chicken broth 4 tablespoons apple cider vinegar 2 tablespoon dried chives 3 teaspoons garlic powder 3 teaspoons onion powder 1 teaspoon crushed red pepper flakes 1 teaspoon dried dill 1/2 teaspoon salt 1/2 teaspoon black pepper 1 cup (4 oz) shredded cheddar (add 1/4 cup of nutritional yeast for dairy free) 1 scallion, green and white parts, thinly sliced (optional) Directions Add the chopped bacon to a skillet and cook until crispy. Transfer to a plate and set aside. Add the 2 Tbs of bacon grease, chicken, cream cheese, broth, vinegar, chives, garlic powder, onion powder, crushed red pepper flakes, dill, salt, and black pepper to the instant pot. Turn the pot on Manual, High Pressure for 15 minutes (25 min if your chicken is frozen) and then do a quick release. Transfer the chicken to a large bowl and shred using a hand mixer, or you can shred it with 2 forks, and return it back to the pot. Stir in the cheddar cheese. Dinner. London broil seared in a pan on the stove. Came out pretty tasty. Directions: 1) Get your meat out and let it come to room temperature. 2) Melt lots of butter in a pan. Yes, lots. If it's not dripping from the ceiling, it's not enough. 3) Grind/toss some of your favorite sodium into the butter. 4) When the butter is bubbling hot, lay the meat in it. Now don't move it. Seriously. Don't move it. Let it sear. 5) Toss in your favorite herbs. In my case, I tossed in some fresh rosemary that I surreptitiously stole from my neighbors front yard when I realized I was out of store-bought rosemary. It's ok. He still has my BBQ set. He owes me. 6) Baste the roast with a spoon, tossing the butter over it. 7) Flip it, trapping a stem or two of the rosemary underneath it, continue to baste it. 8) After about 4 1/2 minutes each side, cover and remove from heat. Let it sit in the pan for 10 minutes. 9) After 10 min covered in the pan, move it to a cutting board and let it sit uncovered high enough so that your Greyhound can't pull it off of the counter.
