When deciding what to eat, I like to stop and think about how I am going to feel once I eat an item. I look at the picture in the top and I feel tired and sluggish. I look at the farm fresh vegetables on the bottom and I feel happy, energized and excited. When deciding what to eat, think about how you want to feel the rest of the day. Often times we just think about what tastes delicious. My New Years resolution is to eat more fruit- I already ate 3 servings a day- but I want to get closer to 6-7 servings. It’s so good for you, it’s delicious, it’s easy. As a holistic health counselor- people are always trying to cut out fruit because of the sugar. Is there sugar in fruit yes- but it is also loaded with vitamins, minerals, antioxidants, phytochemicals, fiber and a plethora of other benefits that have not even been discovered yet. And the sugar in fruit is natural, it’s not isolated or manipulated in a factory. 🤩One of my favorite meals from VegInspired.com are these CHICKPEA GYROS with a tasty Yogurt-Tahini Sauce! It’s so good, I’m sharing it with YOU!😘 #veginspired 🌱 CHICKPEA GYROS WITH TAHINI-YOGURT SAUCE ▪2 cans chickpeas, drained, rinsed, and patted dry ▪2-3 tablespoons red wine vinegar ▪1-2 teaspoons oregano ▪1/2-1 teaspoon garlic powder ▪4 whole wheat pita ▪greens, spinach, etc. ▪cucumber, chopped ▪tomato, chopped ▪red bell pepper chopped ▪red onion, sliced (Yogurt-Tahini Sauce 1 1/2 cups plain vegan yogurt 2-3 tablespoons tahini 1 garlic clove, minced 1 teaspoon dried dill 2 tablespoons lemon juice or red/white wine vinegar 1 tablespoon fresh parsley, chopped 1 large cucumber, peeled, seeded, and shredded (optional - this makes it a tzatziki) Mix all ingredients in a small bowl. ) Instructions 1. Preheat oven to 400 degrees Fahrenheit 2. Roast Chickpeas on a parchment lined baking sheet for 30 minutes 3. Dress chickpeas with red wine vinegar, oregano, and garlic powder 4. Warm Pitas 5. My profile photo is only the good half of the truth. Swipe to see how I look if health doesn’t get first priority. It didn’t always only hit my skin. And it has been many long periods, with better skin but inflammation in joints and serious neurological issues. A variety of epilepsy alike seizures was the daily norm for more than a decade. Cognitive dysfunction and severe memory loss were frequent. And the worst was the exhaustion. But now merely my skin, as if my body is signaling me visually. No pain. No seizures. No inflammation. Less exhaustion. And now I plan to quit hydrocortisone cream for good, and be free of all medication. For me vegan is not enough. I need vegan Whole Foods Plant Based NO OIL to control the autoimmune. And I need to rest and sleep enough. But is hard. Sometimes too hard. Sometimes I eat a vegan meal out, circumstances vary, and that one meal with added oil can trigger a flare up to two weeks later. A vaccine, flu, cold or just lack or rest can also trigger. So as if hormonal cravings weren’t enough I also realized that environment is maybe my most important factor for success. I used to blame myself for my weakness every time I fell for temptation, only to realize that I actually do best when not being tempted by “anyone”. When not having to defend myself. When not having to excuse myself. And it looks like I’m finally succeeding. And a big part of that is the current wave of information of the many important impacts of going vegan. I am actually a great example. But only if you see both sides of me.
