It's the last day of fasting! You know a list of our favourite recipes wouldn't be complete without this! Jollof rice. #1DayToEid Ingredients 4 cups of rice, 2 kg of Chicken (chicken, beef or meat), 1 cup of crayfish (optional), 1 to 1.2 liter of Ground Fresh tomatoes, 40 to 100 ml Ground Fresh peppers, Spices (Curry, Thyme, Delice or Nutmeg), 2 cubes of knorr , 2 Bulbs of onions, 20 to 30 cl vegetable or groundnut oil, salt to taste. How to prepare 1. Marinate and parboil chicken or meat with the spices, add sliced 1 bulb of onions, 3 cubes of knorr, salt, curry, thyme. 2. Parboil the rice the normal way, allow to cook for three to four minutes. 3. Add sliced onions to hot oil and then the ground tomatoes/pepper after about a minute. 4. Add the meat extract (meat water), add the ground crayfish, a cube of knorr, if the meat stock is not a good as desired, add salt to taste. Stir . 5. Spice to your taste with your desired flavors and spices, then add the rice, lower the heat and cover to cook. 6. Cook till the rice is soft for consumption.

You guessed it, Peppersoup anyone? #2DaysToEid Ingredients Catfish, Ehu or Ariwo or Calabash Nutmeg - 4 seeds, Pepper (to taste), Dry Uziza - 2 teaspoons (optional) Onions - 2 medium bulbs, Crayfish - 2 tablespoons of ground Crayfish, Salt to taste & Knorr cubes seasoning. How to prepare 1. Wash & cut the cat fish and set aside. 2. Using an old frying pan, roast Ehu seeds (stirring constantly) till you can smell it. Grind the ehu for pepper soup. 3. Place the pieces of cat fish in a pot and pour enough water to cover the contents of the pot. Add your Knorr cubes and onions then cook till done. When some of the water has dried up, Add more water to bring it to the level of the contents of the pot. 4. Add the ground Ehu, crayfish, dry uziza, chilli pepper and salt to taste. Cover the pot and leave to boil for 5 minutes and the pepper soup is ready to be served. Always serve hot

Fisherman soup #3DaysToEid Ingredients 1kg Fresh fish, 2kg Fresh Nigerian tiger prawns, 500g Dried fish or smoked fish (or both), 500g Stockfish (optional),1 cup Crayfish, 3-4 Habanero peppers (Tatashe), 1/2 kg Fresh spinach or pumpkin leaves (ugwu), 100g Fresh basil leaves, 2 Medium onions, 1 cooking spoon of Palm oil, Salt to taste How to prepare 1. Chop onions into large chunks, chop the peppers and fresh basil 2. Add in fresh fish, tiger prawns to the boiled dry fish, along with the chopped onions and peppers and dried cray fish and allow to cook for 5 minutes 3. Add in okra and using a folding action mix these in gently with the rest of the ingredients. Cook the soup for another 5-7 minutes until the okra is al dente 4. Pour in palm oil and cook for another 5 minutes 5. Wash and chop the fresh spinach or pumpkin leaves and add these to the soup and allow to cook for another 5-7 minutes Remove from the heat and serve the soup while hot.

Ofada rice anyone? #4DaysToEid Ingredients 40 pieces of unripe habanero peppers, 2 green tatashe peppers or green bell peppers, 1 locust bean seasoning (Iru, ogiri okpei or dawadawa), palm oil, onion, crayfish(if you choose), assorted meat & fish( Beef, Shaki (cow tripe), Dry fish or Stock fish How to prepare 1. Wash & blend the peppers and the onion. Remember to remove the seeds from the green tatashe or the green bell peppers. 2. Grind the crayfish and the locust bean seasoning with a dry mill. 3. Cook your meat and fish with the Knorr cubes till well done. 4. Pour the blended pepper into a separate pot and cook on high heat till all the water dries up. 5. Pour the red palm oil into a clean dry pot and bleach till it turns clear. It should look like vegetable oil when done. Leave the oil to cool down a bit then add the boiled pepper puree, Fry till all the water has dried from the pepper. 6. Add the crayfish and locust bean seasoning, your meat & fish and stir well. Add salt to taste, leave to simmer and it is ready to be served with Ofada rice

Would you try this? #5DaysToEid Ingredients 500g Parboiled Rice, 150ml Tomato Stew, 100ml Coconut Milk, 100 ml Chicken or Beef stock, 1 medium sized Onion bulb, Ground Crayfish(optional), Knorr cubes, Pepper & Salt (to taste) How to prepare 1. Pour in tomato stew, meat stock and the extracted coconut milk. Leave to boil for 5 minutes 2. Pour in the parboiled rice to the pot, add the ground crayfish, stock cubes, pepper and salt to taste. Make sure that the liquid in the pot is at the same level as the rice in the pot, if not, add some more to top it up. 3. Cover and leave the rice to cook on medium heat until the liquid in the pot is dried up. The rice should be properly done when there is no more liquid in the pot. Serve with the grilled/fried meat and enjoy.

Have we missed any of your favourites? #6DaysToEid Ingredients 200g of egusi seed, 400g of beef, 50g of cooked and boned stockfish pieces, 3 spoons of ground dried crayfish, 1 small bunch of ugwu or bitter leaves, 50ml of palm oil ,2 Knorr cubes, 1 small onions , 4 large fresh tomatoes , 1 teaspoon ground chilli powder. How to prepare 1. Cut beef into tiny pieces, season with 1 chopped onion and 1 Knorr cube. Add half a cup of water and boil for about 10 minutes or until tender. Set aside. 2. Mix ground egusi in half a cup of water. Set aside. Also blend the tomatoes, 1 onion and chilli. Set aside. 3. Heat palm oil in another pot and add the egusi mixture. Stir well and allow the egusi to fry a little, then add the blend and stir well. Add ground crayfish, Knorr cubes and stockfish. 4. Add 2 cups of water and allow to cook for 5 minutes. Then add the boiled meat and stir. Turn heat down and simmer for a further 2 minutes. 5. Wash and finely slice the ugwu leaves. Add to the simmering soup and stir in. Continue to simmer for a further 5 minutes to allow the vegetables to soften. Serve with cassava fufu or garri.

How does some efo riro and pounded yam sound for a feastful Eid? #7DaysToEid Ingredients 4bunches of spinach, wash, 6 medium fresh tomatoes, 1 medium onion, 1 yellow scotch bonnet, (optional), 1 tablespoon locust beans/iru (optional), 4 fish cutlets (any white fish), 2 tablespoons ground crayfish, 1 cup of chicken stock, 50g smoked haddock or smoked mackerel, 100ml palm oil, 2 Knorr cubes. How to prepare 1. Boil 2 cups of water, dissolve a seasoning cube and spinach for no than 1 minute. Drain and allow to rest. 2. Blend onion, tomatoes, scotch bonnet (if using), and locust beans. Heat palm oil in a pot and add blend. Add stock and stir. Allow to boil for about 10 minutes, 3. Add ground crayfish and continue to cook. Add fish cutlets, smoked haddock/mackerel, add 1 Knorr cube, then stir. 4. Add the blanched spinach. Stir well to mix sauce with spinach. Cover and simmer for another 2-3 minutes or till the fish is cooked. Best served with pounded yam but can also be served with rice, amala, garri etc

Here's another delicious meal for your Eid feast- Sea fried rice #8DaysToEid Ingredients 4 cups of rice , Carrot {about 3 big sizes}, Green beans {2 cups}, Peas {half cup}, Green pepper {1 big size}, Vegetable Oil, Meat (chicken, goat or beef), Cow Liver (100g), Curry Powder (1 tablespoon), Green Beans (a handful), 5 medium sized carrots, 3 medium onions, 3 Knorr cubes, 1 teaspoon thyme, Salt (to taste) How to prepare 1. Pour in about 10 to 15cl of groundnut or vegetable oil. 2. Allow to heat then add the sliced onions stir for 1-2 minutes then add the chopped carrot and green beans, any of this two can actually go first. 3. Stir for 1-2 minutes then add the curry powder and stir till you are satisfied with the color. 4. Add the cabbage, stir, add the meat stock, add ground pepper, add the chopped liver, add 1-2 cubes of knorr then stir and taste. 5. Add green pepper, stir, add the almost-done white rice, stir, cover your pot and cook for 5 to 10 minutes, you are done with fried rice.

Here's a yummy salad to accompany yesterday's prawns! #9DaysToEid Ingredients 1 medium bunch of Lettuce, 5 Carrots, 4 Potatoes, 2 Cucumbers, 3 Eggs, 1 415g tin of Baked Beans in tomato sauce, 200g Sweet Corn, 5 Tomatoes, Salad Dressing, Cream, or Mayonnaise. How to prepare 1. Cook the potatoes, and boil eggs. 2. Wash all the vegetables, cut the lettuce into thin shreds; shred the carrots using a grater; peel and cut the boiled potatoes into cubes. 3. Peel and cut cucumber in strips; Cut tomatoes into small pieces. 4. Add all the vegetable ingredients into a big salad bowl in little batches. 5. Place the sliced eggs on the salad. Cover the bowl and place in the fridge for at least one hour. This helps all the flavours and aromas mix well in the dish. Serve with any of the salad dressings mentioned above.
